225g (½ lb) Macroom Extra Course Brown Flour (or other extra course brown flour)
225g (½ lb) plain flour
1 tsp salt
1 tsp bread soda
1 tsp dark brown sugar
2 tbsp sunflower cooking oil
235ml (½ pint) buttermilk or sour milk
Cooking Instructions
Preheat the oven to 190ºC/375ºF/gas mark 5
Sift the plain flour, salt and baking powder in a bowl, add the Macroom Extra Course Brown Flour and dark brown sugar and mix well. Make a well in the centre and add the oil and buttermilk. Mix very well and pour the mixture into a greased (5 ½ x 10 ½ in) loaf tin. Bake in the preheated oven for approx. 45 minutes. For a softer crust cool on a wire tray and cover with a damp tea towel.
Serve with butter and Folláin Jam or Marmalade, or with cheese and Folláin Relish.
Traditional Brown Soda Bread
Substitute 55g (2 oz) margarine or butter for the cooking oil in the above recipe, rubbing it in to the dry ingredients before adding in the buttermilk. After adding the buttermilk, turn the mixture onto a floured surface and knead lightly, shape into a round about 2 inches deep and then place on a baking sheet. Bake in a preheated oven 190ºC/375ºF/gas mark 5 for 40 – 45 minutes.
