4 fresh fillets of cod, hake or any white fish Beer Batter:
125g (4½ oz) self raising flour
Pinch of salt
120ml (4fl oz) beer
120ml (4fl oz) cold water Folláin Pink Sauce
4 tbsp Mayonnaise
4 tsp Folláin Tomato Relish
Cooking Instructions
Heat the oil in a deep fryer to 180ºC/350ºF
To make the pink sauce, mix the mayonnaise and Follain Relish together in
a small bowl. To make the batter, sieve the flour and salt in a bowl, make a
well in the centre and gradually whisk in the beer and water. Allow to stand
for a few minutes. Dip the fish fillets in the batter, allow the excess to drip off
and lower gently into the oil 1 piece at a time. Deep fry until golden, drain on
kitchen paper an keep warm while you cook the remaining fillets. Serve the
fish as soon as possible with lots of Folláin Pink Sauce and some
homemade chips and peas.
