Beat eggs together with salt (if using) and pepper and the water. Melt the
butter in a heavy based frying pan. Add eggs to the pan and turn down the
heat. Using the back of a fork, stir the mixture, dragging the cooked egg from
the edges of the pan into the centre to ensure an evenly cooked omelette.
Place the grated cheese and diced tomato in the middle, top with 2
teaspoons of Folláin Exotic Fruit Relish, fold over the omelette and serve
immediately with some extra Follain Exotic Fruit Relish on the side.
