Preheat the oven to 200C/400F gas 6.
Put the breadcrumbs into a bowl. Add the salt and pepper and mix together.
Whisk the egg with milk in a large bowl. Coat each piece of chicken in the
egg mixture and then coat in the breadcrumbs, so that each piece is coated
evenly. Arrange the crumbed chicken on a lightly oiled baking sheet. Bake
in the oven for 10 minutes or until browned, crisp and cooked through
(alternatively you could fry them in a frying pan with some olive oil). Serve
with a bowlful of Folláin Tomato Relish for dunking in.
