Heat the oil in a frying pan, add the chopped onion and garlic and cook over a
medium heat until soft and slightly golden. Increase the heat, add the mince
and fry until brown. Add the cumin, oregano, chilli, tinned tomatoes, Folláin Fire Roasted Pepper Relish and red kidney beans. Then shake in the soy
sauce and season well with the salt and pepper. Cover and cook for 20
minutes then taste and check the seasoning. Serve with rice or potatoes.
