Potato and Onion Frittata with Folláin Tomato Relish

A quick and easy lunch that can also be served as a tasty vegetarian main course. Experiment with different fillings, but don't forget to serve it with Folláin Relish!

Cooking Time: 5 - 10 minutes
Serves: 3

Ingredients

Potato and Onion Frittata with Folláin Tomato Relish
  • 2 – 3 Cooked potatoes - peeled and diced
  • 1 Onion thinly sliced
  • 6 Eggs – lightly beaten with 2 tbsp water
  • Salt and freshly ground pepper
  • A little butter and olive oil
  • Folláin Tomato Relish

Fry the onion in the olive oil until soft. Add the potatoes and fry for 2 minutes.
Season the egg mixture and pour into the pan. Place pan under a pre heated grill until set. Tip onto a plate on slice into wedges. Turn out and serve with Folláin Tomato Relish.
