Potato and Onion Frittata
with Folláin Tomato Relish
A quick and easy lunch that can also be served as a tasty
vegetarian main course. Experiment with different fillings,
but don't forget to serve it with Folláin Relish!
Fry the onion in the olive oil until soft. Add the potatoes and fry for 2 minutes.
Season the egg mixture and pour into the pan. Place pan under a pre
heated grill until set. Tip onto a plate on slice into wedges.
Turn out and serve with Folláin Tomato Relish.
