Tuna Fish Cakes with Folláin Pink Sauce

A quick recipe for using up cans of tuna fish you find in the cupboard, you could also serve these delicious fish cakes with Folláin Pink Sauce.

Ingredients

Tuna Fish Cakes with Folláin Pink Sauce
  • 200g (7 oz) potatoes, cooked and grated
  • Salt and freshly ground pepper
  • 1 tbsp fresh chives
  • 1 tbsp fresh parsley
  • 150g (5½ oz) tinned tuna
  • 1 egg, beaten
  • 1 tsp plain flour
  • 1 tbsp olive oil

Folláin Pink Sauce

  • 4 tbsp Mayonnaise
  • 4 tsp Folláin Fire Roasted Pepper or Tomato Relish

Place all the patty ingredients into the bowl of a food-processor and blend until the mixture is well combined. Roll the fish cake mixture into four patties. Heat the olive oil in a small frying pan and fry for three minutes each side or until golden-brown. To make the pink sauce, mix the mayonnaise and Folláin Fire Roasted Pepper or Tomato Relish together in a small bowl. Serve the fish cakes with plenty of the Folláin Pink Sauce.
