Prep time: 5 minutes
Cooking time: Chill for 15 minutes
Serves: 2

  • Handful of thinly sliced radish, red onion or cucumber
  • 1 Tbsp Sugar or Honey
  • 60ml Hot Water
  • Top up with any vinegar, we prefer white wine vinegar.
  • 1/4 tsp Mustard seeds
  • 1/4 tsp Coriander seeds
  • 1/4 tsp Pink Peppercorns
  • Salt to taste

  1. To make the quick pickle use a Folláin Jar or any standard size jar, adding 1 tbsp of sugar or honey and 60ml of hot water, stir to dissolve the sugar.
  2. Add all the seeds and 1/4 tsp of salt.
  3. Add all your sliced vegetables and then top up with vinegar, covering all the vegetables but reserving a little space from the top.
  4. Taste the pickle liquid and season to your own taste - add more salt, honey or vinegar to balance.
  5. Once you're happy with the taste, cover the jar and give it a good shake and allow to chill for 15mins to an hour and then serve.
  6. This will keep for up to 2 weeks in the fridge.
