Roasted butternut squash

This is a perfect dish by itself or as an accompaniment to many, perfect as a snack or to graze on.

The delicate nutty flavours of our roasted butternut squash is delicious served with our zesty mint salsa.

Ingredients

  • 1 Butternut squash

Method

  1. Wash butternut squash and cut length ways into quarters
  2. Simply preheat the oven to 180c, and place chunks from one large butternut squash into a roasting dish, cut-sides up
  3. Drizzle with good quality olive oil, and 2 tablespoons of butter
  4. Season with freshly ground pepper, salt flakes and add some fresh thyme sprigs
  5. Roast in the oven for 45 mins until the squash has turned golden-brown.
  6. Serve with mint salsa with fresh garden peas, new potatoes, or baby carrots
  7. This will keep in the fridge for 3 days.⁠
