Roasted butternut squash
This is a perfect dish by itself or as an accompaniment to many, perfect as a snack or to graze on.
The delicate nutty flavours of our roasted butternut squash is delicious served with our zesty mint salsa.

1 Butternut squash

- Wash butternut squash and cut length ways into quarters
- Simply preheat the oven to 180c, and place chunks from one large butternut squash into a roasting dish, cut-sides up
- Drizzle with good quality olive oil, and 2 tablespoons of butter
- Season with freshly ground pepper, salt flakes and add some fresh thyme sprigs

Roast in the oven for 45 mins until the squash has turned golden-brown.

Serve with mint salsa with fresh garden peas, new potatoes, or baby carrots
- This will keep in the fridge for 3 days.
