They’ll keep for 2-3 days in a tin…if they last that long…

Ingredients
- 1 jar Folláin Nothing But Fruit Strawberry
- 100g kerrygold unsalted butter, softened
- 175g caster sugar (plus extra for sprinkling)
- 1 egg
- 1 tsp vanilla paste
- 200g plain flour (plus extra for dusting)
Method
- Beat butter + sugar until smooth. Add egg + vanilla.
- Fold in flour. Shape into a disc, chill 10 mins.
- Roll to 5mm thick, cut 16 bases + 16 tops (cut small hole in tops). Chill again 10 mins.
- Bake 7 mins at 170°C fan. Sprinkle tops with sugar, bake another 5 mins.

Cool, then sandwich with our NBF Strawberry.
