Air fryer donuts, lovingly filled with our Rhubarb and Ginger Jam. It tastes as good as it sounds, and is the perfect quick and tasty treat to celebrate the weekend.

Rhubarb and Ginger Jam - Traditional Recipe

Ingredients

  • 200g/220g self raising flour
  • 200g thick greek yoghurt
  • 25g butter melted
  • 2 tbsp caster sugar
  • Pinch salt
  • 1 tsp vanilla extract
  • 1 egg
  • 1 jar Folláin Rhubarb and Ginger Jam

Method

  1. Whisk the egg, yoghurt & vanilla extract together until smooth
  2. Add the dry ingredients and stir to a smooth dough
  3. Dust some flour over a plate for placing your dough balls on to
  4. Portion out heaped tbsp of the mixture on to the floured plate
  5. Flour your hands & roll into balls
  6. Preheat airfryer to 200 degrees Celsius (roast or bake setting)
  7. Place some parchment in the airfryer & spray with oil
  8. Add the donut balls, leaving space in between and spray with 4-5 sprays of oil
  9. Bake for 8 minutes at 200 degrees then reduce the temperature to 170 and bake for a further 4-5 minutes
  10. Brush with 20g melted butter and cover in sugar
  11. Make hole in donuts and fill with Rhubarb and Ginger Jam
