Ingredients

  • 1 sheet all-butter puff pastry
  • 150g soft goat’s cheese
  • 2 tbsp cream or milk
  • 4-5 tbsp Folláin Apricot Preserve
  • Fresh thyme leaves
  • 1 egg, beaten (for brushing)⁠

Method

  1. Preheat to 200°C (fan 180°C). Line tray.⁠
  2. Cut pastry into 6 squares, score a 1cm border.⁠
  3. Whip goat’s cheese + cream, spread in centre.⁠
  4. Swirl in Apricot Preserve, sprinkle thyme.⁠
  5. Brush edges with egg wash.⁠
  6. Bake 18–20 mins until golden.⁠
