Ingredients
- 1 sheet all-butter puff pastry
- 150g soft goat’s cheese
- 2 tbsp cream or milk
- 4-5 tbsp Folláin Apricot Preserve
- Fresh thyme leaves
- 1 egg, beaten (for brushing)
Method
- Preheat to 200°C (fan 180°C). Line tray.
- Cut pastry into 6 squares, score a 1cm border.
- Whip goat’s cheese + cream, spread in centre.
- Swirl in Apricot Preserve, sprinkle thyme.
- Brush edges with egg wash.
- Bake 18–20 mins until golden.
