Braised red cabbage
This Braised Red Cabbage recipe is the perfect combination of flavour, aroma, and nostalgia.

Ingredients
- 100g butter
- 1 small red cabbage (600g), finely shreddedv
- 1 Bramley apple, peeled, cored, and sliced
- 100g demerara sugar
- 100ml red wine vinegar
- 2 cinnamon sticks
- 2 star anise
- 2 cloves
- 1 lemon (zested and juiced)
- To taste sea salt and black pepper
Method
- Preheat oven to 160°C. Melt butter in a large pan, then soften cabbage and apple for 5-10 minutes.
- Add sugar, vinegar, spices, and lemon. Stir and season.
- Cover with wet baking paper, place lid on, and bake for 1½ hours.
