Ingredients

  • 8 ripe figs, halved
  • 30g honey
  • 20g pistachios finely chopped
  • Few thyme sprigs, roughly chopped
  • 100g artisan cheese (Coolea, Ardsallagh Goat’s Cheese, or Young Buck Blue Cheese)

Method

  1. Arrange figs cut-side up on a tray.
  2. Gently push a slice of cheese into each fig.
  3. Drizzle with honey and sprinkle with pistachios and thyme.
