Figs with artisan cheese, pistachios, and honey drizzle

Ingredients
- 8 ripe figs, halved
- 30g honey
- 20g pistachios finely chopped
- Few thyme sprigs, roughly chopped
- 100g artisan cheese (Coolea, Ardsallagh Goat’s Cheese, or Young Buck Blue Cheese)
Method
- Arrange figs cut-side up on a tray.
- Gently push a slice of cheese into each fig.
- Drizzle with honey and sprinkle with pistachios and thyme.
