8 Ripe figs, halved30g Honey20g Pistachios finely choppedFew Thyme sprigs, roughly chopped100g Artisan cheese (Coolea, Ardsallagh Goat’s Cheese, or Young Buck Blue Cheese)

- Arrange figs cut-side up on a tray.
- Gently push a slice of cheese into each fig.
- Drizzle with honey and sprinkle with pistachios and thyme.
