Flapjacks
Our Lunchbox Legend Flapjacks tick every box: easy to make, freezable, fibre-packed, and sweetened naturally with honey or golden syrup. Our Spoonful’s Blueberry, Cherry, Chia & Pumpkin Seeds adds an additional tangy, satisfying bite. Pack them for school runs, weekend hikes, or… those moments when the fruit bowl is still full but nobody wants an apple.

Ingredients
- 200g rolled oats
- 100g unsalted butter
- 50g honey or golden syrup
- 1 tsp vanilla extract
- Pinch of salt
- 1/3 jar Spoonful’s Blueberry, Cherry, Chia & Pumpkin Seeds (approx. 100g)
Method
- Preheat the oven to 180°C
- Melt the unsalted butter gently in a saucepan or microwave.
- In a large bowl, combine the rolled oats & salt.
- Mix in the melted butter, honey (or golden syrup), vanilla extract- mix well.
- Add Spoonful’s into the mixture and mix,
- Press the mixture firmly into a lined baking tin (approximately 20x20cm).
- Bake for approximately 40 minutes, or until golden brown and set.
- Remove from the oven and allow to cool completely in the tin before slicing — this helps the flapjacks firm up perfectly.
