Folláin prawn cocktail
A refreshing starter for a summers day.
This retro starter is modernised by the addition of Folláin Tomato Relish which adds a more appealing and interesting texture, than the plain old fashioned pink sauce made with ketchup.

Ingredients
- 400g cooked shelled prawns
- 1 head of lettuce, shredded
- 4 tbsp mayonnaise
- 2 heaped tbsp Folláin tomato relish
- Chopped Fresh parsley
Method
- Place shredded lettuce in 4 small bowls. Divide prawns between dishes.
- Mix mayonnaise and Folláin Tomato Relish together.
- Cover the prawns with mayonnaise mixture, and sprinkle with parsley.
