Homemade Chicken Nuggets with Tomato Relish
These chicken nuggets are much better than the shop bought variety and very easy to prepare and cook.
Serve with your favourite Follain relish or chutney. Nuggets can also be frozen and saved for another days meal.

900g Chicken breast (diced)225g Fresh White Breadcrumbs1 Egg (whisked)100ml MilkFresh Ground pepper4 tbsp Folláin Tomato Relish

- Preheat the oven to 200 /400 /gas 6.
- Put the breadcrumbs into a bowl.
- Add the salt and pepper and mix together.
- Whisk the egg with milk in a large bowl.
- Coat each piece of chicken in the egg mixture and then coat in the breadcrumbs, so that each piece is coated evenly.
- Arrange the crumbed chicken on a lightly oiled baking sheet.
- Bake in the oven for 10 minutes or until browned, crisp and cooked through (alternatively you could fry them in a frying pan with some olive oil).
- Serve with a bowlful of Folláin Tomato Relish for dunking in.
