Tomato and Chilli Jam

Ingredients

  • 500g new potatoes, thoroughly washed
  • 2 tablespoons olive oil
  • Sea salt, to taste
  • Freshly ground black pepper to taste
  • 1 teaspoon smoked paprika (optional, for added flavor)

Method

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Slice the new potatoes very thinly, using a mandoline slicer or a sharp knife, to ensure even cooking.
  3. In a large bowl, toss the potato slices with olive oil, sea salt, freshly ground black pepper, and smoked paprika until evenly coated.
  4. Arrange the potato slices in a single layer on the baking sheet, ensuring they don't overlap. Bake in the preheated oven for 15-20 minutes, or until they are crispy and golden brown. You may need to turn the slices halfway through baking for even crispness.
  5. Remove the crisps from the oven and let them cool on a wire rack to maintain their crispiness.
  6. Serve with some Folláin Tomato and Chilli Jam Dip
