Tomato and Chilli Dipping Sauce
The perfect accompaniment to some classic dishes served for Chinese New Year (dumplings, spring rolls and steamed fish)

3 tablespoons Folláin's Tomato and Chilli Relish2 tablespoons soy sauce (or tamari for a gluten-free option)1 tablespoon sesame oil1 tablespoon honey or brown sugar2 cloves garlic, minced1 inch piece of ginger, grated1 tablespoon rice vinegar1 teaspoon fish sauce (optional)1 teaspoon Sriracha sauce or more, to taste (optional for extra heat)Juice of half a lime1 scallion spring onion, finely choppedA pinch of ground black pepper

- In a medium bowl, combine the Ingredients and whisk together our Tomato and Chilli Relish, soy sauce, sesame oil, honey or brown sugar, minced garlic, grated ginger, rice vinegar, fish sauce (if using), Sriracha (if using), lime juice, chopped green onion, and black pepper.
- Adjust the Flavors: Taste the marinade and adjust the seasoning if needed. If you prefer more sweetness, add a bit more honey.
- For more acidity, a splash more rice vinegar can be added.
