Mushrooms Stuffed with Goats Cheese

The hardest thing about this recipe for mouth-wateringly meaty Field mushrooms is choosing which delicious Folláin Relish to have with it.

These mushrooms have a wonderfully earthy taste, combined with the wild flavour of goats cheese and balanced with tomato relish.

Irish Tomato Relish

Ingredients

  • 4 large Field mushrooms (sometimes called breakfast mushrooms)
  • 5 oz. (140g) Soft goat’s cheese
  • 1 clove Chopped garlic
  • 1 tbsp Chopped parsley (optional)
  • 1tsp Chopped thyme (optional)
  • 2 tbsp Olive oil

Method

  1. Preheat the oven to 220ºC/420ºF/gas mark 7.
  2. Place the goat’s cheese, garlic, thyme, parsley and 1 tbsp of the olive oil in a blender, and whiz to a smooth paste.
  3. Season the mushrooms with salt and pepper and drizzle with the remaining oil.
  4. Divide the goat’s cheese mixture evenly between them.
  5. Cook for 15 – 20 minutes or until they are golden and the mushrooms are soft to the point of a knife.
  6. Drop a spoonful of Folláin Tomato or Fire-Roasted Pepper Relish in the centre of each mushroom and serve.
  7. You could substitute the goat’s cheese for blue cheese, cream cheese or any cheese of your choice.
