Potato and onion frittata with tomato relish

Irish Tomato Relish

Ingredients

  • 2 – 3 cooked potatoes (peeled and diced)
  • 1 onion thinly sliced
  • 6 eggs (lightly beaten with 2 tbsp water)
  • Pinch salt and freshly ground pepper
  • 1 tbsp butter and olive oil
  • 1 tbsp Folláin Tomato Relish

Method

  1. Fry the onion in olive oil until soft. Add the potatoes and fry for 2 minutes.
  2. Season the egg mixture and pour into the pan.
  3. Place pan under a preheated grill until set.
  4. Tip onto a plate on a slice into wedges.
  5. Turn out and serve with Folláin Tomato Relish.
