Potato and Onion Frittata with Tomato Relish
A quick and easy lunch
This recipe can also be served as a tasty vegetarian main course. Experiment with different fillings, but don’t forget to serve it with Folláin Relish!

Irish Tomato Relish

2 – 3 Cooked potatoes (peeled and diced)1 Onion thinly sliced6 Eggs (lightly beaten with 2 tbsp water)Pinch Salt and freshly ground pepper1 tbsp Butter and olive oil1 tbsp Folláin Tomato Relish

- Fry the onion in olive oil until soft. Add the potatoes and fry for 2 minutes.
- Season the egg mixture and pour into the pan.
- Place pan under a preheated grill until set.
- Tip onto a plate on a slice into wedges.
- Turn out and serve with Folláin Tomato Relish.
