Quick-Pickle Recipe⁠

Refreshing, delicious and easy!⁠

This recipe for quick pickles couldn't be simpler! You can use radish, cucumber, red onions or a mix of all three if you'd like! The trick is to get the pickle liquid perfectly balanced using a little bit of honey, vinegar and water! So make sure to taste as you go! ⁠Serve with our delicious blue cheese toastie!⁠

Cooking time: Chill for 15 minutes
Serves: 2

Ingredients

  • Handful of thinly sliced radish, red onion or cucumber⁠
  • 1 Tbsp Sugar or Honey⁠
  • 60ml Hot Water⁠
  • Top up with any vinegar, we prefer white wine vinegar. ⁠
  • 1/4 tsp Mustard seeds⁠
  • 1/4 tsp Coriander seeds⁠
  • 1/4 tsp Pink Peppercorns⁠
  • Salt to taste⁠

Method

  1. To make the quick pickle use a Folláin Jar or any standard size jar, adding 1 tbsp of sugar or honey and 60ml of hot water, stir to dissolve the sugar. ⁠
  2. Add all the seeds and 1/4 tsp of salt.⁠
  3. Add all your sliced vegetables and then top up with vinegar, covering all the vegetables but reserving a little space from the top.⁠
  4. Taste the pickle liquid and season to your own taste - add more salt, honey or vinegar to balance. ⁠
  5. Once you're happy with the taste, cover the jar and give it a good shake and allow to chill for 15mins to an hour and then serve.
  6. This will keep for up to 2 weeks in the fridge.⁠
