Raspberry Crumble Oat Bars

- Preheat your oven to 180c and line an 8-inch baking dish with baking paper.
- In a large bowl, mix together the oats, spelt flour, baking powder, cinnamon, and salt.
- Stir in the melted coconut oil, honey, and vanilla extract until well combined.
- Press the mixture evenly and tightly into the prepared baking dish.
- Then add the raspberry jam layer, and smooth that evenly on top.

For the topping, mix together the oats, spelt flour, peanut butter, melted butter, and
honey until crumbly. -
Sprinkle the crumble mixture over the jam layer and bake for 25-30 minutes, until the
top is golden and crisp. - Let the bars cool completely before removing from the baking tin and slicing into squares. This recipe makes 12 large squares or 24 smaller ones.
- Store in the fridge and enjoy as a snack or dessert!
