Ingredients

  • Base Layer:
  • 170g oats
  • 150g spelt flour
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • Pinch of salt coconut oil, melted
  • 140g coconut oil, melted
  • 60g honey
  • 1 tsp vanilla extract
  • Raspberry Jam Layer:
  • 300g Folláin Raspberry Jam
  • Crumble Topping:
  • 75g oats
  • 50g spelt flour
  • 45g peanut butter
  • 25g butter, melted
  • 25g honey

Method

  1. Preheat your oven to 180c and line an 8-inch baking dish with baking paper.
  2. In a large bowl, mix together the oats, spelt flour, baking powder, cinnamon, and salt.
  3. Stir in the melted coconut oil, honey, and vanilla extract until well combined.
  4. Press the mixture evenly and tightly into the prepared baking dish.
  5. Then add the raspberry jam layer, and smooth that evenly on top.
  6. For the topping, mix together the oats, spelt flour, peanut butter, melted butter, and
    honey until crumbly.
  7. Sprinkle the crumble mixture over the jam layer and bake for 25-30 minutes, until the
    top is golden and crisp.
  8. Let the bars cool completely before removing from the baking tin and slicing into squares. This recipe makes 12 large squares or 24 smaller ones.
  9. Store in the fridge and enjoy as a snack or dessert!
