Gorgeous Roasted Red Pepper, Goat’s Cheese and Basil pastry, served with dollops of our Caramelised Red Onion Relish with Black Garlic,

Caramelised Onion with Black Garlic Relish
Alternatives:

- Tomato and Chilli Jam or
- Chargrilled Red Pepper Relish
Ingredients
- 1 pack (approx 320g) Shop bought ready rolled puff pastry
- 1 of each Red and yellow bell peppers sliced thinly
- 1 Red onions sliced
- 1 Round goats cheese log
- Bunch Fresh Basil
- 1 jar Our Caramelised Red Onion Relish with Black Garlic
Method
- Cut pastry into 12 cm squares.
- Toss peppers and onions in oil.
- Place in centre of pastry 3 cms from edge, cook blind for 10 mins at high heat, then add the goats cheese to centre on top of vegetables.
- Put back in oven for 6 mins or until pastry nicely browned and goats cheese cooked but not too runny (grill can work for this as well).
- Remove and place on wire tray to cool. Add dollops of our Caramelised Red Onion Relish with Black Garlic and the fresh basil leaves.
