Tuna Melt with Relish
A twist on the tried-and-true tuna sandwich,
These zippy oven melts make for a fabulous lunch, serve with your favorite Folláin relish.

Irish Tomato Relish

Ingredients
- 1 can (170 g) Drained flaked tuna
- 2 Spring onions (chopped)
- 2 heaped tsp Folláin Tomato, Fire Roasted Pepper or Exotic Fruit Relish
- 50g Grated cheddar cheese
- 4 tbsp Mayonnaise
- 4 Sesame buns (you could also use baguettes)
Method
- Preheat the oven to 200ºC/400ºF/gas mark 5.
- In a medium mixing bowl, stir together the tuna, chopped spring onions, and cheese.
- Add the mayonnaise and Folláin Relish and stir to mix.
- Spoon the tuna mixture into split buns, dividing it evenly.
- Wrap each bun tightly in foil.
- Place in preheated oven and bake for 15 minutes — or until the cheese is melted and the filling is hot.
- Serve immediately.
