Traditional Recipe

Spiced Irish Apple Jelly

Ingredients

  • 100g Folláin Spiced Apple Jelly
  • 1 large egg
  • 50g soft brown sugar
  • 50ml oil (sunflower or rapeseed)
  • 1 tsp vanilla extract
  • 125g plain flour (or wholemeal for extra fibre)
  • ½ tsp baking powder
  • ½ tsp ground cinnamon
  • Pinch of salt
  • Optional: 50g grated apple for added moisture

Method

  1. Preheat oven to 170°C (fan). Line a 20x20cm tin with parchment.
  2. In a bowl, whisk egg, sugar, oil, and vanilla until well combined.
  3. Stir in jam (and grated apple, if using).
  4. Fold in flour, baking powder, cinnamon, and salt until just combined.
  5. Spread into tin and bake for 20–25 minutes or until lightly golden and springy.
  6. Cool in tin and cut into squares.
