Spoonfuls French Toast

Ingredients

  • 4 slices of bread (sourdough or brioche work well)
  • 2 eggs
  • 100ml milk
  • 1 tsp vanilla extract
  • Butter or oil, for frying
  • 4 tbsp Folláin Spoonfuls (any variant)
  • 4 tbsp Greek yoghurt
  • 1 banana, sliced
  • Handful chopped nuts (optional)

Method

  1. Whisk eggs, milk, and vanilla in a shallow bowl.
  2. Dip bread into the mixture, letting it soak for a few seconds on each side.
  3. Heat a little butter or oil in a pan. Cook the soaked bread slices until golden on both sides.
  4. Plate up and layer with a generous spoonful of Spoonfuls, a dollop of yoghurt, banana slices, and a sprinkle of chopped nuts if you like.
