Homemade Herbal Teas

Winter walks sharpen the senses.
The landscape stripped back. Fewer distractions. Plenty to notice if you’re looking.
It’s also a good time of year for foraging ingredients for simple herbal teas — warming, restorative, and easy to make at home.

We keep dried blends in empty Folláin jars — a small, practical nod to zero waste and the circular economy, and a lovely New Year or house-warming gift.

Prep time: 30 minutes

Materials

  • Empty Folláin jar(s)
  • Look for nettle leaves, bramble (blackberry) leaves, thyme, rosemary, pine needles (from Scots pine), rosehips and hawthorn berries. Winter has plenty to offer, but only pick what you can confidently identify and use.
  • Empty tea bags
  • String

Method

  1. Forage carefully - Look for nettle leaves, bramble (blackberry) leaves, thyme, rosemary, pine needles (from Scots pine), rosehips and hawthorn berries. Winter has plenty to offer, but only pick what you can confidently identify and use.
  2. Rinse everything well. Nettles should be handled with gloves, but their sting disappears once dried or steeped.
  3. Dry or use fresh. Leaves and herbs can be air-dried and stored, or used fresh. Rosehips benefit from drying first or a long, slow steep.
  4. Blend & steep. Combine flavours simply. Pour just-boiled water over a small handful and steep for 10–15 minutes.
