Apple & Cinnamon Breakfast Blondies
A gently sweetened, soft-textured traybake with hidden fruit and warm spice — ideal for lunchboxes or batch breakfasts.

Ingredients
- 100g Folláin Spiced Apple Jelly
- 1 large egg
- 50g soft brown sugar
- 50ml oil (sunflower or rapeseed)
- 1 tsp vanilla extract
- 125g plain flour (or wholemeal for extra fibre)
- ½ tsp baking powder
- ½ tsp ground cinnamon
- Pinch of salt
- Optional: 50g grated apple for added moisture
Method
- Preheat oven to 170°C (fan). Line a 20x20cm tin with parchment.
- In a bowl, whisk egg, sugar, oil, and vanilla until well combined.
- Stir in jam (and grated apple, if using).
- Fold in flour, baking powder, cinnamon, and salt until just combined.
- Spread into tin and bake for 20–25 minutes or until lightly golden and springy.
- Cool in tin and cut into squares.
