Braised Red Cabbage

100g butter1 small red cabbage (600g), finely shreddedv1 Bramley apple, peeled, cored, and sliced100g demerara sugar100ml red wine vinegar2 cinnamon sticks2 star anise2 cloves1 lemon (zested and juiced)To taste Sea salt and black pepper

- Preheat oven to 160°C. Melt butter in a large pan, then soften cabbage and apple for 5-10 minutes.
- Add sugar, vinegar, spices, and lemon. Stir and season.
- Cover with wet baking paper, place lid on, and bake for 1½ hours.
