1 slice of toasted sourdough (just regular sourdough from artisan bakery ideally - doesn’t need to be a particular brand)100g cottage cheese (generic cottage cheese from bowl/jar)1 tbsp Folláin SpoonfulsFew sprigs Fresh thyme or mint (optional)1 tbsp Fresh fruitGarnish with Cracked black pepper

- Spread the cottage cheese generously over toasted sourdough.
- Spoon Spoonfuls on top in a soft ripple pattern.
- Garnish with sliced fresh fruit, herbs and a grind of pepper.
