Traditional Recipe

Raspberry Jam

  • 175g (6 oz) Plain flour
  • 50g (2 oz) Icing sugar
  • 125g (4 oz) Butter at room temperature
  • 225g (8 oz) Fresh raspberries
  • 225g Folláin Raspberry Jam


  1. Preheat the oven to 190ºC/375ºF/gas mark 5.
  2. Sieve the flour, icing sugar into a mixing bowl.
  3. Add the butter and beat until the mixture comes together or resembles fine breadcrumbs.
  4. Press evenly into a greased pie dish (or individual pie dishes) and bake for about 10 minutes or until pale brown in colour.
  5. Remove from the oven and allow to cool.
  6. Arrange raspberries on the cooled base.
  7. Place the Folláin Raspberry Jam in a small sauce, over low heat until it begins to boil.
  8. Spoon the hot Folláin Traditional or nothing but fruit Raspberry Jam over the fruit.
  9. Cover and refrigerate for about an hour before serving.
  10. Serve with whipped cream or ice cream.
