Rocket, Walnut and Blue Cheese Toastie⁠

Warm yourself up from the inside out, then with a SERIOUSLY tasty, oozy, gooey, utterly unctuous toastie.

The soft rich flavour of caramelised onions and deep earthy sweet taste of Irish fermented black garlic, offset the tangy saltiness of the blue cheese, and makes for the perfect bedfellow with a peppery rocket, balanced out with some mild tannins from the crushed walnuts.

Ingredients

  • 2 Thick slices of your favourite bread
  • 30g Mature Cheese (grated)⁠
  • 30g Blue Cheese (crumbled) any stilton-style blue like Cashel blue or young buck.⁠
  • 20g Rocket⁠
  • 10g Red Onion (optional)⁠
  • 15g Walnuts (crushed)⁠
  • 25g Folláin Caramelised Red Onion Relish⁠
  • Optional Worcestershire Sauce to taste⁠

Method

  1. Best made in a sandwich maker or sandwich press but can be grilled and/or made on a griddle-pan for extra crispiness!
  2. Using a knife spread the onion relish on both slices of bread. ⁠
  3. Add the blue cheese, crushed walnuts and cheddar followed by the rocket and a dash of Worcestershire sauce. ⁠
  4. Cover with other slice of bread. Butter the outside and place on a griddle pan (5 minutes each side) or in a sandwich press for 10 minutes.⁠
  5. Serve with red onion and/or cucumber, or if you have an extra few minutes to spare, why not try your hand at our quick pickle recipe?⁠
