Ingredients

  • 250g self-raising flour
  • ½ tsp sea salt
  • 1 tsp baking powder
  • 60g cold unsalted butter, cubed
  • 100g aged cheddar, grated
  • 2 tbsp wild garlic, finely chopped (or chives)
  • 150ml whole milk
  • 1 tsp Dijon mustard
  • 1 egg, beaten (for brushing)

Method

  1. Preheat oven to 200°C fan and line a baking tray.
  2. Whisk flour, salt and baking powder in a bowl.
  3. Rub in the butter until it resembles breadcrumbs.
  4. Stir in the cheese and wild garlic.
  5. Mix milk with Dijon, then combine with the dry mix until just together.
  6. Pat dough to 3cm thick. Cut with a floured cutter—no twisting!
  7. Brush tops with egg and bake 12–15 mins until golden.
