250g self-raising flour½ tsp sea salt1 tsp baking powder60g cold unsalted butter, cubed100g aged cheddar, grated2 tbsp wild garlic, finely chopped (or chives)150ml whole milk1 tsp Dijon mustard1 egg, beaten (for brushing)

- Preheat oven to 200°C fan and line a baking tray.
- Whisk flour, salt and baking powder in a bowl.
- Rub in the butter until it resembles breadcrumbs.
- Stir in the cheese and wild garlic.
- Mix milk with Dijon, then combine with the dry mix until just together.
- Pat dough to 3cm thick. Cut with a floured cutter—no twisting!
- Brush tops with egg and bake 12–15 mins until golden.
