Baked Camembert with Spiced Gooseberry

Ingredients
- Spiced Gooseberry
- 1/2 red onions, thinly sliced (or half of a red onion
- 2 tbsp Folláin Gooseberry Jam
- 1 small bay leaf
- 0.5 tsp mustard seeds
- 0.5 heaped tsp salt
- 75ml cider vinegar
- Baked Cheese
- 250g Irish Camembert or Brie
- 1 tbsp vermouth OR dry white wine
- 2 thyme sprigs
- pinch of dried chilli flakes
- To serve crackers or toasted bread

Method:
Spiced GooseberryPut all the ingredients in a large, heavy-based saucepan. -
Cook over a medium heat, then bring the mixture to the simmer and cook, uncovered, for 30 mins.

Baked Cheese
Heat oven to 200C/180C fan/gas 6. -
Unwrap 250g camembert, brie or similar from its packaging, then place back into its box.
- Tie string around the box to secure.

Slash the cheese a few times and top with 1 tbsp vermouth or dry white wine, 2 thyme sprigs and a pinch of dried chilli flakes.
- Bake on a baking tray for 20 mins until gooey
